today is charmaine ng yu ling's birthdae !!

today, char and i made lemon meringue pie :)
oh, i must say that mrs huang would be so proud of us.
she alwaes said that she wanted her st nicks baobeis to be,
"jing de liao chu fang, chu de liao ting tang"
and i think char and i will make pretty decent housewives next time :)
yay !

and i think mrs huang would be even more delighted to know that,
the recipes that we have been using for our baking creations,
are all taken from the st nicks cook book !

here's how we made our pie.
there's three main steps.
1 - make the pie crust
2 - make the lemon custard filling
3 - make the coolbeans meringue

first, mix in some flour, suger, butter and water.

when it is all nice and doughy, flatten out the dough.
because we couldnt find the rolling pin, we used a plastic cup instead.


when the dough is nicely flattened onto the baking tray,
throw it into the oven to bake for 20mins until golden brown !
be sure to make a crust with TALL sides,
so that the custard fillings wont leak out at the sides.
when the crust and nicely baked, leave it out to cool down,
while we start on our custard filling.
you are highly recommended to start with the custard only after the crust is done,
that is because the custard solidifies really quickly.
also, it gets burnt really easily too.
to make the lemon custard,
mix a bowl of castor suger, fresh milk and flour.
next, heat it over medium fire until it starts to thicken.

when the mixture thickens,
add in 2 egg yolks and a cup of freshly squeezed lemon juice.
be sure to stir the mixture VIGOROUSLY,
because the yolk and lemon juice causes the mixture to thicken much more quickly.
poor mixing will produce an awfully lumpy custard.

and when you're satisfied with the mixing,
pour the yummy lemon custard onto the crispy crust !!

now, we can start on the meringue :)
using an electric mixer, whisk egg whites with a tablespoon of sugar,
until the mixture becomes nice and fluffy !!
and then you can spread it onto the custard.

next, pop the pie into the oven and bake for 5mins,
until the edges of the meringue turn nice and brown :)

oh, another successful creation by char and kerly :)
char's family tried it and loved it.
i cant wait to show it off to my mum and sister tomorrow !!

my grandma was diagnosed with cataracts last week,
4 days later, she's done with surgery on her right eye.
she waiting for her right eye to recover before getting her left eye done.
she's staying with us now, because its too not safe to have her stay alone.
my aunty who stays with her is alwaes out at work,
so its better to stay with one of us,
because we have a maid at home to care for her.

my grandma is damn cute.
before she decided on who's house to stayover at,
she visited all of us, and lay on the beds to test-sleep.
and she finally chose my brother's bed.

spent alot of time with my grandma today.
she made me watch the video of her cataract surgery.
i think its really cool that private hospitals video-records the surgery,
and let the patient keep a DVD copy of it.

my grandma was really pleased with herself for surviving the surgery.
and i felt really smart,
because everyone was like "ouch !! what is the doctor doing?"
and then i'll be like "oh yes, he's doing this because blahblahblah.."
very good for the ego indeed !

interesting eh.
yes indeed, i need a new camera !

i'm so going to be broke in a few months time.
so many things to buy and pay for, and money always not enough.
i need to win lottery !
oh, someone give me some divine numbers NOW !!

here's why.

1. Graham NEEDS her accupunture therapy session
accupunture therapy is gaining popularity in Singapore.
its a fantastic alternative to invasive surgery for pets,
it is non-invasive, so less risk like anaesthetic reaction, bleeding, infection.
plus with so many pet owners sending their pets for therapy,
there has been many studies, research and development in this area of therapy,
and results have been encouraging.
of course, results depends on the initial severity of the pet's injury.
but my vet said that some paralysed pets had been successfully treated,
and have regain almost normal hind limp movement.

but non-invasive treatment comes with an expensive price tag,
a therapeutic session cost $80 per 30mins of treatment,
each session lasts for 30-60mins depending on requirement.
and most pets require at least 10-15 therapy sessions to show results.
plus, there are some pre-treatment diagnostic imaging and investigations to be done.

i think its going to cost me $1000-1500 in total,
char and i are going to spilt the cost.
so thats about $500 per person.
ouch.


2. I NEED a camera
both of my sony T3 died on me,
and my sister's camera sucks.
i need a camera before i fly off to India !
no camera = no fun in foreign land,
so it is a MUST !!
so thats another $500 plus/minus gone.
ouch.


3. I NEED a laptop to bring along for the India trip
my dad gave me a $2000 budget,
but i really dunno what laptop to get.
and i think its quite waste money to get a laptop just because of the trip.
ouch.


4. I WANT my CK element watch
i went shopping with mellow yesterday,
i showed her the watch that i've been eyeing.
she and i tried it on, and it was absolutely lovely.
my love for the watch is once again renewed.

plus there is a 10% discount on that watch now,
so its $460 now, down from $510.
mellow loves it so much, she's getting it too.
we're going to have same same watches again !
yay !!



in baking news,
char and i made chocolate mousse.
i think its pretty darn good for beginners like us.
even my mum, who is super damn niao about food,
commented that the chocolate mousse was yummy and good.

here's what we used.
whipping cream, 3eggs, some sugar, and baking chocolates.

first, whisk the whipping cream until it becomes whipped cream.
it becomes really nice and fluffy.
i dunno if we could actually used ready-made whipped cream,
thats why we just bought whipping cream, as stated in the recipe.

next, prepare the eggs.
add 3 tablespoons of suagr and beat it up until creamy and even.

in the meanwhile,
prepare the baking chocolate by double-boiling it.
but be careful not to over boil it !!
we did not know that an overboiled chocolate turns into a hard mass which is unusable,
so we had to throw away the first batch of baking chocolate.
when the chocolate is warm and melted,
add it into the sugar, egg mixture and beat it till creamy and smooth.

next, add in the whipping cream.

and viola, we have our very own chocolate mousse !!
remember to chill it in the fridge for at least 3-4hours,
until it has solidify before trying it !

i havent been blogging much because i've been busy with Graham.
been spending so much time with her,
even Cookie and Raisin are jealous.
when they smell Graham's scent on me, they will get angry and shun me :(
thankgoodness, bunnies are easily bought over with sweet treats.

Graham has been doing very well.
she's been really active all these while, eating and pooping well too.
plus she is finally cooperative when it comes to her meds.


unfortunately, despite our best efforts,
she developed another pressure sore on the opposite side of her bum :(

we gave her a super thick bed - multiple towels with a water beds underneath,
and even used pillows to prop her into neutral -resting position,
but because of the weakness in her hindlegs,
she inevitably flops back onto her sides.
plus she would bite the supportive pillows and push them away.

but now with painful sores on both sides,
she's more cooperative and sits quietly between the pillows.

i heard that sheepskin is a really good material for preventing pressure sores.
but sheepskin is really expensive !
anyone know where to get cheap sheepskin?

we also made everything more accessible for her.
she has her own bowl of water, pellets, carrots and hay within mouth's reach.
all she needs to do is to stick her head into either bowl and start eating !!

this is her pressure sore which is granulating well.
we're waiting for her scab to dry up and drop off.
yes indeed, it looks bad and painful.
poor baby.

recently, i made friends with a japanese engineer.
he and his wife adopted a disabled rabbit called LingLing.
similar to Graham, LingLing is paralysed waist down,
and is only able to move around by drag herself with her front paws.

Don, the jap guy, made LingLing a wheelchair.
it is really cool!!
now, LingLing is able to run around and play with the other rabbits at home.

Don's really nice, he taught me how to make Graham a wheelchair too.
and thats why i've been even busier than usual,
must take care of hammy plus run all over the island,
finding the different parts necessary for the construction of the wheelchair.

not only that, he taught me alot on caring for a disabled rabbit.
ie: 4hourly scheduled bladder massage, to express Graham's urine,
this is to prevent her from soiling herself,
and also, to prevent skin infection from prolonged exposure to the acidic urine

oh, i cant wait to make Graham her very own wheelchair too !

i love my cowboy bun :)
oh, rayray is such a cutester !


i went back to st nicks for lunch last week.
and i must say, i really miss the food there !
plus it is really cheap too.
all thanks to our ex-principal, mrs huang :)

when mrs huang was the xiaozhang,
she made sure that the canteen stall rental was low.
she charged the hawkers $2 a month for rental.

why so cheap?
cheap because she made a deal with them.
they get to enjoy cheap rental as long as they promise not to sell unhealthy snacks & fried food.

also, because the rental was so cheap,
the hawkers could sell their food to students cheaply too.
which is absolutely perfect for us,
we get cheap, yummy and healthy food !

yes indeed, mrs huang really loved us so :)
oh, i love mrs huang & st nicks food so much !
yums :)

i've been spending alot of time watching tv these days,
most of the shows are cooking/baking programmes.
and i love it !

and when i'm not watching tv,
i'll be online, searching for new baking/cooking recipes.
hahahhaha.
yes indeed, very excessive, very crazy.

anywae, i cannot help but notice that everyone uses KitchenAid.
the KitchenAid products are damn good !
not only are they very stylish, they are designed for multi-uses too !!

i checked out the price of a KitchenAid mixer bowl at Tangs.
and the price ranges from S$900 to over $1000 !!
oh crazyness to the max.

and what's more horrifying,
my cousin from malaysia, recently picked up baking.
and she asked my dad to help her buy the KitchenAid mixer.
so there's one sitting in my house now.
bah, so jealous :(

anywae, char and i made cupcakes.
here's the recipe.

first, mix an equal amount of sugar and butter.

next, beat up 2 eggs, and add it into the mixture.

when its nice and smooth, add in some self-raising flour.

in a meanwhile, prepare some chocolate for the cupcakes !

you can either chop them up into huge bits.
or grate it into finer bits.
we love chocolates, so we did both !!
to get a very chocolatey cupcake !
